About this place
Picking your favourite sweet cream or bean paste to fill a fluffy, chewy white koppepan bun is one of the simplest pleasures of visiting this bakery. Tucked into a residential pocket of Ninoecho in Edogawa Ward, Chimasa is a take-away bakery built around the fun of putting together your own custom bread.
The base bread options go beyond the classic white koppepan to include "oshiri-pan" kneaded with fresh cream for a tender crumb, brioche animal buns made with plenty of butter and eggs, and melonpan fragrant with lemon. Fillings cater broadly to sweet tooths, spanning staple custard and chocolate cream to chunky peanut cream, dark-roast coffee bean paste, seasonal fruit creams, and thick slices of butter.
For lunch or a savoury bite, the sandwich counter has plenty of substance. Options range from egg sandwiches and neatly arranged ham-and-cucumber cuts on fresh sandwich loaf to stacked mille-feuille katsu and Sangenton pork loin cutlet sandwiches. Classic favourites also appear, including a cabbage-packed croquette burger and juicy chicken burgers.
The compact shop is open just two days a week, on Wednesdays and Saturdays, with cash-only payment. Mixing a sweet custom koppepan with a hearty savoury sandwich makes for an easy take-away lunch or outing snack.
